Good-for-you Banana Chocolate Chip Muffins
Dry Ingredients:
1 cup whole wheat flour
1/2 cup all-purpose flour
1/6 cup Splenda sugar blend (or 1/3 cup Splenda)
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
Wet Ingredients: (you'll notice in this recipe, the sugar is actually considered a dry ingredient instead of wet)
1/2 cup (1 stick) unsalted butter
1 cup nonfat vanilla yogurt
1 large egg
1 teaspoon vanilla
Add-ins:
2 bananas mashed
3 oz. semi-sweet chocolate chips (half a small bag)
(You can really add in whatever your little heart desires here. I've made blueberry muffins with this recipe, and cranberry, and probably a few other variations. You can even mix up the yogurt flavor to a more complementary flavor if you'd like.)
Prep:
Preheat oven to 400 degrees F and line 12 (1/3-cup) muffin cups with paper liners.
Directions:
Into a large bowl, sift together flour, Splenda, baking powder, baking soda, and salt. Melt butter in microwave (preferably in a medium microwavable bowl you can fit other wet ingredients into). In medium bowl, whisk together melted butter, yogurt, egg, and vanilla. Stir wet ingredients into dry until just combined. Add in bananas and chocolate chips until combined.
Bake:
Divide the batter among muffin cups (this batter is thick and will not run easily like other muffin batters) and bake in middle of 400 degree oven until golden and a tester comes out clean, about 20 minutes.
Eat:
These are best eaten still warm, fresh from the oven, while the chocolate chips are all gooey inside. They are still pretty darn good cooled... if they last that long. If you plan to keep for more than a day, I'd recommend storing them in the refrigerator and then microwaving them for about 20 seconds before eating.
