Stealing the idea from a few other blogs (and ignoring the idea that no one cares what you had for lunch, I mean, dinner), I've decided to try to post our weekly menus here each Sunday. I'm doing this mostly for me, so I'll have a place to go look back and see what we liked and didn't like if we're stuck in a food rut, but also because I love food blogs and food-related blog posts and figure maybe some of you out there do to? We eat mostly whole-food, vegetarian meals at home (Adam will occasionally cook up some chicken or a burger, but doesn't usually bother), so that's what you'll see here. If you have any comments or recipe suggestions, I'd love to see them!
Sunday: Pasta with Tomato Sauce
- via Annie's Eats and Smitten Kitchen
- Might sound boring and easy, but I'm making completely homemade pasta (and I don't even have a Kitchenaid or a pasta maker, so we're talking rolling pin here) and this amazingly delicious and deceptively simple tomato sauce. (I throw the sauce in the blender at the end, before tossing with pasta, because I am not a fan of chunky tomato sauces.)
- Leftovers will be Monday's lunch for me.
Monday: Roasted Tofu with Green Beans
- from Clean Food
- I'll be halving the recipe and leaving out the mushrooms. Hopefully there will be leftovers for my lunch on Tuesday.
Tuesday: Chile Bisque
- from How to Cook Everything Vegetarian
- I'll be subbing in milk for the cream, although I may make some cashew cream to add in for richness. We weren't able to find the dried ancho chilies it calls for in our grocery store, so we chose one of the other half-dozen or so dried chilies they had instead. Probably make some veggies to round out the meal.
- Again planning on leftovers for lunch on Wednesday.
Wednesday: Curried Eggplant with Coconut Milk
- another recipe from How to Cook Everything Vegetarian
- served with whole wheat roti (adapted from the roti dough recipe here)
- Leftovers for Thursday's lunch. (Sensing a pattern? I try to eat leftovers as much as possible... makes deciding on lunch so much easier!)
Thursday: Oatmeal Griddle Cakes with Eggs
- yet another recipe from How to Cook Everything Vegetarian (I got it for Christmas and we just opened it up to random pages and chose recipes this week.)
- served with over-easy eggs (my husband makes THE BEST over-easy eggs ever)
- Doubt there'll be any leftovers with this one, so I'll have to figure out my lunch for Friday... it'll have to be something easy that doesn't need to be refrigerated, since I'll be in court in the morning. PBJ?
Friday: Vegetable Masala Burgers

- Trader Joe's vegetable masala burgers are one of my favorite veggie burgers, so I am excited to try out this knock-off recipe. We did buy a box of the vegetable masala burgers from Trader Joe's just in case we failed, though. :-)
Saturday: Nothing planned yet. We made a resolution not to eat out at restaurants in January (except for unavoidable work lunches where we have no choice), and so far so good (at least on my part!), so we'll most likely be eating at home on Saturday. Either we'll figure it out before grocery shopping, or if we don't go shopping until Sunday, we'll just wing it with whatever we've got around the house.
Whee! Good stuff - I can't wait to steal some of these for my blog.

I find food posts interesting b/c I am always looking to add to my very limited repertoire.
However what was most exciting about this post was that you said HUSBAND. Yay!
