(I just upgraded my blogging platform after about, oh, half a decade of using the previous one. I know I've missed the last couple of weeks, but here's what's on tap for this week's dinners:
Sunday: Vegetable Pot Pie
- modified version of the Three Sisters Deep Dish Pie in Clean Food
- leftovers for one or two lunches this week
Monday: Rustic Cabbage Soup
- from 101 Cookbooks; we've made this before... it's really delicious
- enough for leftovers for a lunch or two
Tuesday: Stuffed Peppers
- from Spice Goddess
Wednesday: Taco Salad
- salad greens topped with slow-cooked black beans, fajita-style peppers and onions, and salsa... might throw some cheese on there as well, but it's probably not necessary
Thursday: Garbanzo Burgers
- another 101 Cookbooks/Super Natural Cooking recipe, which we've made several times before
- topped with avocado, pea shoots, and tomatoes
- probably enough for leftovers for Friday's lunch
Friday and Saturday, we're just going to wing it. Next Sunday, we're having some friends over for a potluck style Mexican dinner. We're contributing chicken mole (haven't figured out the veggie version of it yet), margaritas and sangria. Delicioso!
I'm definitely going to have to make that cabbage soup - I'm on a cabbage kick right now!
