Last week's hits and misses:

Vegetable Pot Pie: Sooooo good. This made excellent lunch leftovers. I may actually make this again one weekend just to have for lunches all week. YUM!

Rustic Cabbage Soup: We've made this before. It's a good soup for when you're feeling a little under the weather.

Garbanzo Burgers: These are really, really good. I like that she uses the "burgers" as the buns and sticks the toppings inside. We have half the recipe in the freezer for future meals.

Stuffed Peppers: Miss. Big miss. Of course, it doesn't help that we didn't have fresh ginger so Adam substituted ground, but I don't think we would have been a fan even if it had been prepared according to the recipe. We trashed it all and had leftovers.

We ended up postponing our supper club to next weekend, but we had some friends over for spaghetti and meatballs last night. Adam made his grandmother's meatball recipe, which got good reviews. (I, of course, can't comment on those.) I made the tomato sauce from Smitten Kitchen again, this time with some garlic cloves thrown in. I think the garlic was a good addition.

Monday: Curried Tofu Scramble with Spinach and Crunchy Slaw Salad from Super Natural Cooking, and Lemon Blackberry Souffles from Baking Bites
- leftover tofu scramble will be lunch for Tuesday

Tuesday: Cauliflower Soup (Super Natural Cooking) and leftover Crunchy Slaw Salad
- soup for lunch on Friday (I've got a conference Wednesday and Thursday, so I won't be bringing lunch those days)

Wednesday: Tomatillo-Sauced Enchiladas with Spinach and Poblanos and Daikon Salad with Arugula and Lime-Cilantro Dressing
- Riffs on recipes from Mexican Everyday

Thursday: Thai-Spiced Tomato Soup and leftover Daikon Salad
- When this soup popped on The Kitchn the other day, I immediately knew I wanted to make it.

(I just upgraded my blogging platform after about, oh, half a decade of using the previous one. I know I've missed the last couple of weeks, but here's what's on tap for this week's dinners:

Sunday: Vegetable Pot Pie
- modified version of the Three Sisters Deep Dish Pie in Clean Food
- leftovers for one or two lunches this week

Monday: Rustic Cabbage Soup
- from 101 Cookbooks; we've made this before... it's really delicious
- enough for leftovers for a lunch or two

Tuesday: Stuffed Peppers
- from Spice Goddess

Wednesday: Taco Salad
- salad greens topped with slow-cooked black beans, fajita-style peppers and onions, and salsa... might throw some cheese on there as well, but it's probably not necessary

Thursday: Garbanzo Burgers
- another 101 Cookbooks/Super Natural Cooking recipe, which we've made several times before
- topped with avocado, pea shoots, and tomatoes
- probably enough for leftovers for Friday's lunch

Friday and Saturday, we're just going to wing it. Next Sunday, we're having some friends over for a potluck style Mexican dinner. We're contributing chicken mole (haven't figured out the veggie version of it yet), margaritas and sangria. Delicioso!

Okay, so I didn't get around to posting last week's menu. Last week was CRAZY at work, so nonessential things just didn't get done, including blogging. Here's a round-up of the last menu I posted.

Last week's hits and misses...

I think my first homemade pasta attempt went pretty well for not having a pasta machine and doing everything by hand. The pasta tasted great, but was a but thicker than regular pasta. Next time I'll try to roll it out even thinner... I didn't realize how much it would plump up during cooking.

Monday's roasted tofu with green beans was a HUGE hit. We will definitely be making that again.

Adam was pretty skeptical about the oatmeal griddle cakes, but they were sooo good. They would make a great brunch option. In fact, I liked them so much that I ended up making a breakfast version with bananas for breakfast over the weekend.

The Daily Garnish's version of Trader Joe's Vegetable Masala Burgers was super delicious. I think the only problem we had was that we have a smaller food processor, so we had to add the veggies to the food processor in batches and so the veggies we put in first were over-processed, which effected the overall texture of the burger. We just ordered a new, larger food processor so next time I'm sure they'll be even better. And there will definitely be a next time.

Tuesday's chile bisque was a bust. I don't know if it was because we used a different type of dried chile or what, but it was too spicy... and we like our heat! It just didn't have a lot of depth or interest in the flavor either.

*Weekly Menus*




Stealing the idea from a few other blogs (and ignoring the idea that no one cares what you had for lunch, I mean, dinner), I've decided to try to post our weekly menus here each Sunday. I'm doing this mostly for me, so I'll have a place to go look back and see what we liked and didn't like if we're stuck in a food rut, but also because I love food blogs and food-related blog posts and figure maybe some of you out there do to? We eat mostly whole-food, vegetarian meals at home (Adam will occasionally cook up some chicken or a burger, but doesn't usually bother), so that's what you'll see here. If you have any comments or recipe suggestions, I'd love to see them!

Sunday: Pasta with Tomato Sauce
- via Annie's Eats and Smitten Kitchen
- Might sound boring and easy, but I'm making completely homemade pasta (and I don't even have a Kitchenaid or a pasta maker, so we're talking rolling pin here) and this amazingly delicious and deceptively simple tomato sauce. (I throw the sauce in the blender at the end, before tossing with pasta, because I am not a fan of chunky tomato sauces.)
- Leftovers will be Monday's lunch for me.

Monday: Roasted Tofu with Green Beans
- from Clean Food
- I'll be halving the recipe and leaving out the mushrooms. Hopefully there will be leftovers for my lunch on Tuesday.

Tuesday: Chile Bisque
- from How to Cook Everything Vegetarian
- I'll be subbing in milk for the cream, although I may make some cashew cream to add in for richness. We weren't able to find the dried ancho chilies it calls for in our grocery store, so we chose one of the other half-dozen or so dried chilies they had instead. Probably make some veggies to round out the meal.
- Again planning on leftovers for lunch on Wednesday.

Wednesday: Curried Eggplant with Coconut Milk
- another recipe from How to Cook Everything Vegetarian
- served with whole wheat roti (adapted from the roti dough recipe here)
- Leftovers for Thursday's lunch. (Sensing a pattern? I try to eat leftovers as much as possible... makes deciding on lunch so much easier!)

Thursday: Oatmeal Griddle Cakes with Eggs
- yet another recipe from How to Cook Everything Vegetarian (I got it for Christmas and we just opened it up to random pages and chose recipes this week.)
- served with over-easy eggs (my husband makes THE BEST over-easy eggs ever)
- Doubt there'll be any leftovers with this one, so I'll have to figure out my lunch for Friday... it'll have to be something easy that doesn't need to be refrigerated, since I'll be in court in the morning. PBJ?

Friday: Vegetable Masala Burgers
- via Daily Garnish
- Trader Joe's vegetable masala burgers are one of my favorite veggie burgers, so I am excited to try out this knock-off recipe. We did buy a box of the vegetable masala burgers from Trader Joe's just in case we failed, though. :-)

Saturday: Nothing planned yet. We made a resolution not to eat out at restaurants in January (except for unavoidable work lunches where we have no choice), and so far so good (at least on my part!), so we'll most likely be eating at home on Saturday. Either we'll figure it out before grocery shopping, or if we don't go shopping until Sunday, we'll just wing it with whatever we've got around the house.
